These pancakes won't fool anyone into thinking they are the real thing, but they are incredibly satisfying. Full of protein and antioxidant rich blueberries, they are a great way to start your day!
Ingredients:
- 1 tablespoon mascarpone or chevre cheese*
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- Egg whites from 3 large eggs (should be about 3/4 cup)
- 1 tbsp olive oil
- 1 cup blueberries
Directions:
In a small bowl, beat cheese, vanilla and cinnamon with an electric mixer until light and fluffy. (approximately 3 minutes)In a separate bowl, beat egg whites until stiff peaks begin to form, about 4 minutes.
Gently fold the cheese mix into the egg whites. Mix until just combined.
Heat a non-stick pan on medium-high heat and lightly brush with oil.
Pour 1/3 cup of the batter into the pan. Sprinkle a small handful blueberries on top. Cook until edges turn slightly brown and bubbles begin to appear in the center.
Flip pancake and continue to cook on the other side.
Top with other fresh fruits or real maple syrup.
