Pico de Gallo



Fresh, authentic pico de gallo adds flavor to any dish!  (or any tortilla chip!)

I love the firm texture of roma tomatoes in this, but since the romas in my garden aren't quite ready I used tomatoes on the vine.

Ingredients:

2 large tomatoes, seeded and diced
1/2 red onion, diced
1/2 cucumber, peeled and diced
2 tbsp cilantro
1 tbsp minced garlic
1 jalapeno, seeded and diced
pinch of salt

 

Directions:

Mix all ingredients together and enjoy!


Time Saver Tips:  If you don't have fresh cilantro on hand, this is an incredible substitute!
