Blueberry Apple Cinnamon Flax Muffins

This super moist muffin is great for a healthy breakfast on the go. 

Ingredients:



  • 1 1/4 cup flax seed meal (ground flaxseed)
  • 2 tsp baking powder
  • 1 tbsp cinnamon
  • 1/2 tsp salt
  • 1/3 cup sweetener (I use a sugar stevia mix)
  • 4 eggs, beaten
  • 1/4 cup oil or 3 Tbsp greek yogurt
  • 1/2 cup unsweetened applesauce
  • 1 tbsp vanilla
  • 1 apple, chopped
  • 1/4 cup frozen blueberries
  • 1/2 cup chopped nuts

  • Directions:

    1.  Preheat the oven to 350 °F.  Line muffin tins.
    2.  Mix dry ingredients together, then add the wet.
    3. Let stand 10 minutes, and then fill muffin tins.

    4.  Bake 18 minutes, or until a toothpick comes out clean.

    Note: These muffins should be refrigerated after they cool.
