Sweet bell peppers filled with tons of vegetables, lean turkey and spices.
Ingredients
- 4 yellow bell peppers, halved and seeded
- 1 red bell pepper, diced
- 1 lb. lean ground turkey
- 2 tbsp. olive oil
- 1/2 yellow onion, diced
- 1 cup mushrooms, diced
- 1 zuccini, diced
- 1 cup fresh spinach, roughly chopped
- 1 can (14.5 oz.) italian diced tomatoes (drained)
- 2 tsp. italian seasoning
- 2 tsp. garlic powder
- 1/4 cup parmesan cheese
- 1/4 cup shredded mozzarella cheese
Directions
- Preheat the oven to 350 degree F.
- Slice the 4 yellow peppers in half and remove the seeds. Dice all of the other vegetables.
- Roast the pepper halves by wrapping them in aluminum foil and bake in a baking dish for 15 minutes. Remove from heat and set aside.
- In a skillet, brown the turkey and then set aside.
- Heat the olive oil in the skillet, and then added the diced pepper, onion, mushroms, zuccini, and spinach. Cook until tender.
- Mix in the tomatoes, spices, parmesan, and the cooked turkey.
- Fill the cooked pepper halves with the turkey and vegetable mixture. Sprinkle with mozzarella cheese.
8. Return to oven and continue cooking 15 min.
