Guacamole

Guacamole is great as a dip or a topping to chicken, fish, or salads.  It's easy to customize according to your liking or the dish you're making.  I left out the tomatoes in the picture because I was using this as a topping for taco salads, which already had pico de gallo.

Ingredients:

  • 2 hass avocados
  • Juice from 1/2 lime
  • 1/2 tsp sea salt
  • 1 clove garlic, minced
  • 1 tbsp orange juice
  • 1 roma tomato, diced and seeds (not shown in picture)
  • 1/2 tbsp chopped cilantro
  • 1 tbsp sunflower seeds

Directions

1.  Slice the avocado in half and remove the pit.  Scoop the flesh of the avocado into a bowl,
2.  Add lime juice, salt, garlic, and orange juice.
3.  Mash mixture with a fork to combine until desired consistency is achieved.
4.  Mix in onion, tomato, cilantro, and sunflower seeds to combine.


Flavor Tip: If you like creamier guacamole, mix in 1-2 tbsp greek yogurt or sour cream
