After spending a week in Chicago filled with deep dish pizza, Garrett’s popcorn, Epic Burger, Grand De Lux and Chicago Cubs ballpark food, it’s now salad week in our home! This is an excellent side salad, or add grilled chicken or fish to make it an entrée. The simplicity of the dressing is both easy to make and compliments all of the incredible flavors in the salad.
Mediterranean Salad
Ingredients:
- 1 (16 oz.) jar of artichoke hearts (drained and chopped)
- ½ c. Feta cheese, crumbles
- ½ c. red onion, diced
- ½ c. mild banana peppers
- ½ c. cup sundried tomatoes
- 1 (10 1/2 oz.) can chickpeas (drained)
- Easy Basil Vinaigrette Dressing (recipe below)
Directions:
Toss all ingredients in a large bowl. Serve with sliced Italian bread.
Easy Basil Vinaigrette
Ingredients:
- 1 ½ c. basil leaves, finely chopped
- 1 ½ c. extra-virgin olive oil
Directions:
In a medium bowl, whisk olive oil and basil until well blended.
