Although this dish takes an hour in the oven, it comes together very quickly and doesn't require much clean up!

- 4 chicken breasts
- 2 lemons
- 1 onion
- 8 cloves garlic, minced
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tbsp lemon pepper seasoning
- 3/4 lb trimmed green beans
- 8 small red potatoes, quartered
- 4 tablespoons olive oil
- Garlic Powder
- 1/2 cup grated parmesan cheese

Directions
Preheat oven to 450°F. Spray a glass casserole dish with olive oil or non-stick cooking spray. Juice 1 lemon in a large bowl. Add olive oil, minced garlic, lemon pepper seasoning, salt, and pepper. Set aside. Slice the lemons and arrange them in a single layer in the bottom of the prepared dish.
Add the green beans to the bowl with the lemon juice and toss to coat. Remove the beans from the bowl and arrange them on top of the lemon slices, leaving the lemon juice mixture in the bowl. Sprinkle with garlic powder.
Add the potatoes and onions to bowl with the lemon juice mixture and toss to coat. Arrange on top of the green beans and sprinkle with garlic powder.
Place the chicken in the same bowl with the lemon juice mixture and coat thoroughly. Place the chicken on top of the potatoes. Pour any of the remaining lemon juice mixture over the chicken.
Roast for 50 minutes. Remove the chicken and keep warm. Continue to cook the beans and potatoes for another 10 minutes or until the potatoes are tender. Remove from oven and replace the chicken. Top with grated parmesan and serve warm.
