This soup is so refreshing on a hot summer day and is so easy to prepare.
Ingredients:
- 2 cups strawberries, washed and hulled
- 1/2 cup low fat sour cream
- 1/2 cup plain greek yogurt
- 2 tbsp orange juice
- 1 tsp vanilla extract
- 2 tsp stevia (add more if you would like this to be sweeter)
Directions:
Place all ingredients in a food processor. Puree until very smooth. Strain and chill for at least 4 hours.
Serve garnished with berries, a dollop of sour cream or yogurt, or mint leaves.
