Pumpkin Bread Mufins
Ingredients:
3/4 cup whole wheat flour
3/4 cup white flour
1 ½ teaspoons cinnamon
1 1/2 teaspoon pumpkin pie spice
1 teaspoon baking soda
¼ teaspoon baking powder
½ teaspoon salt
2 eggs
½ cup oil
½ cup honey
½ teaspoon vanilla
1 cup pumpkin puree
1/2 cup chopped nuts (optional)
Directions:
- Preheat oven to 350 degrees. Line a muffin pan with muffin liners.
- In a large bowl, mix together the flours, cinnamon, pumpkin pie spice, baking soda, baking powder and salt.
- Move the dry ingredients toward the outside of the bowl, making a well in the center. Add the eggs, oil, honey, and vanilla to the center and mix together, then incorporate into the dry ingredients.
- Gently mix in the pumpkin puree and the nuts.
- Fill the muffin cups and then bake for about 18-20 minutes, or when a toothpick comes out clean.
