Pumpkin Bread Mufins

Ingredients:


  • 3/4 cup whole wheat flour
  • 3/4 cup white flour
  • 1 ½ teaspoons cinnamon
  • 1 1/2 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • 2 eggs
  • ½ cup oil
  • ½ cup honey
  • ½ teaspoon vanilla
  • 1 cup pumpkin puree
  • 1/2 cup chopped nuts (optional)

  • Directions:

    1. Preheat oven to 350 degrees.  Line a muffin pan with muffin liners.
    2. In a large bowl, mix together the flours, cinnamon, pumpkin pie spice, baking soda, baking powder and salt.
    3. Move the dry ingredients toward the outside of the bowl, making a well in the center.  Add the eggs, oil, honey, and vanilla to the center and mix together, then incorporate into the dry ingredients.
    4. Gently mix in the pumpkin puree and the nuts.
    5. Fill the muffin cups and then bake for about 18-20 minutes, or when a toothpick comes out clean.
